Jell-O Changes Everything!!!!

Ok everyone are you ready for this!?!?!?!  We are sharing a HUGE secret with you today!

Gluten free baking mixes have come a long way in their taste and texture, but most are still struggling. We have an amazing tip that will help you create the perfect gluten free baked goodies!  We use this tip for everything from pancakes to cakes and it really makes a huge difference.

OK you want to know what it is yet?  We add a little bit of Jell-O pudding mix to all of our Gluten Free baking recipes.  It adds more flavor, but also helps with the texture and taste of the products.  You can literally try this tip for everything… pancakes, waffles, muffins, cakes, brownies…..EVERYTHING!  Just add 1/2 the mix to whatever you are baking.  Its also fun to spice it up and adding banana pudding mix to your gluten free pancake mix to make banana pancakes or add in chocolate caramel pudding mix to your favorite gluten free brownie mix to make caramel chocolate brownies!

Another thing we are really excited about is Jell-o created a “simply good” brand where they finally took out all the preservatives, dyes and artificial flavorings which makes me even more HAPPY (just make sure you get the right package, they do still have the boxes with all the crap in them).  A lot of these preservatives and artificial flavorings can make food allergic suffers sick.  So opt for this instead of this!  Check out all their yummy new flavors!

Gluten Free Fourth of July BBQ

Fourth of July wouldn’t be the same without some yummy BBQ! Here is my FAVORITE homemade BBQ Rib recipe. GLUTEN FREE, DAIRY FREE, NUT FREE, EGG FREE and could be (soy free just make sure all your seasonings are without soy)!


Carolina Style BBQ Sauce


1/4 Cup Canola Oil

2 Medium Spanish Onions, coarsely chopped

6 Cloves Garlic, coarsely chopped

2 Cups Ketchup

2/3 Cup Dr Pepper

1/4 Cup Ancho Chili Powder

2 Tablespoons Paprika

2/3 Cup Dijon Mustard

2/3 Cup Cider Vinegar

2 Tablespoons Worcestershire Sauce

2 Canned Chipotle Chiles In Adobo, chopped

1/4 Cup Dark Brown Sugar

2 Tablespoons Honey

2 Tablespoons Molasses

Kosher Salt And Freshly Ground Black Pepper




 1/2 Cup Light Brown Sugar

2 Tablespoons Spanish Paprika

2 Tablespoons Kosher Salt

1 Tablespoon Chile Powder

1 Tablespoon Mesquite Seasoning

2 Teaspoons Garlic Powder

1/2 Teaspoon Ground Cinnamon


2 Racks (4-5 Pounds Each) Pork Baby Back Ribs



 For the ribs: Preheat the oven to 275 degrees F.

Line a baking sheet with foil, enough to fold over the ribs, approximately twice the size of the baking sheet.

In a small mixing bowl, combine the sugar, paprika, salt, chile powder, mesquite seasoning, garlic powder and cinnamon. Reserve 1 tablespoon of the rub and set aside.

Place the ribs on the prepared baking sheet. Generously sprinkle the ribs on both sides with the spice mixture. Really rub it in! Place the ribs meat-side down and fold the foil tightly around the ribs to make a sealed packet. Bake the ribs until they become pliable but not falling apart, 2 to 2 1/2 hours. You know the ribs are done when the meat pulls away from the bone. Once the ribs are tender, carefully pour off 1/2 cup of the accumulated juices into a bowl and reserve. Keep the ribs wrapped in the foil to keep warm.

Preheat a grill pan over high heat. Just before serving, slather the ribs with the BBQ sauce and char them on the grill pan, basting them with the sauce and turning as they char up. (If you don’t have a grill pan, you can slather them with sauce and stick them under the broiler to char.) Serve the ribs with extra BBQ sauce on the side.

Four Days to Launch!

FOUR DAYS LEFT until the Allergy Reality app officially launches! We can’t believe it! For those of you who are new to Allergy Reality WELCOME!   We are all about educating and supporting those with food allergies, intolerances, Celiac Disease or anyone living with a restricted diet. We do this with our educational gaming app, this blog and our social media sites through Facebook, Instagram and Twitter.  There are also so many things in the works that we can’t wait to share with you!

The Allergy Reality app covers five main food allergies; gluten, dairy, soy, nuts and eggs.  Players immediately get immersed in real life situations where they open up a fridge and pantry and choose delicious safe foods!  They also learn brand recognition through our sponsored products for quick shopping choices.

Subsequent levels include matching games, where players learn what they can eat for breakfast, lunch and dinner.  Word scramblers make label reading fun!  By the end the users are putting all their knowledge to the test by reading food labels and deciphering if they they are safe and unsafe. In the food allergy world these skills are essential and critical to stay healthy.

With stunning colorful graphics, catchy original music and interactive games, learning becomes fun and exciting! This app not only makes eating allergy friendly easier and enticing, it also empowers those with restricted food diets.

Ulcerative Colitis: Testimonial of Allergy Reality

Three years ago we received some pretty bleak news; my 11 year old son, Tanner, was diagnosed with a severe case of Ulcerative colitis– a chronic, incurable inflammatory bowel disease.

What? We ate mostly whole foods, he was on a competitive gymnastics team, and our family lived a basically healthy lifestyle. How did this happen? Well, it did and as his mother I was determined to help my son. Not wanting to fill my child with prescription medicines, I looked into nutrition. I found a diet that helped many people with similar diseases. It is called the Specific Carbohydrate Diet and cuts out a wide variety of carbohydrates. We learned as we started cutting grains, starches, certain sugars, most dairy, and soy, Tanner’s symptoms dramatically decreased.

He had “legal” foods that helped his body to heal and “illegal” foods that caused problems. This was a huge change for our family as we started eating and cooking differently. It took a lot of adjustment at first. Basically everything I knew about cooking and baking was thrown out the window as I learned to use only fresh, whole, specific ingredients, nothing from a box or can.

Going out to eat? That became almost impossible for a while until we found a few things that most restaurants could safely make for him. I had to be educated on how to help him, and it became easier for Tanner as he learned why he needed to eat this way. When he knew how the “illegal” foods hurt his body, he lost interest in eating them and helped me get a little more creative in the kitchen with his “legal” foods.

It can still be a struggle as we are learning his food intolerances are always changing. Living with, or caring for someone, with multiple food intolerances can be challenging. But, having an app that is fun and teaches what foods to watch out for is so very helpful. I am grateful for the Allergy Reality App to help us deal with the many food intolerances we work around as we strive to keep Tanner healthy!IMG_8065

Allergy Reality Music Launch TODAY!

WOW!  What an EXCITING day!  Our original Allergy Reality Music created by the TALENTED Heather Parker has officially LAUNCHED on ITUNES today!  This is the amazing music that you hear in our app.

Music is an amazing tool to teach children and adults!  The Allergy Reality soundtrack does just that.  It teaches kids and adults about their food specific allergen through key words and root words, while also teaching some of the main food item to stay away from to stay healthy.  The soundtrack features seven songs; one for each of the featured allergens in the app (gluten, dairy, nuts, soy and eggs) and it even has a bonus track!


We are so excited for you and your family to be singing and dancing to these fun and catchy songs.  Food allergies, intolerances and Celiac Disease can be difficult.  It can be isolating and make kids and adults feel hopeless, but that is about to change!  The Allergy Reality Music along with the Allergy Reality App will empower and educate not only food allergy suffers but family members, caregivers, classmates and friends!
