The BEST Gluten Free- Dairy Free Stuffing

Most gluten free stuffing recipes are made with gluten free bread.  There are a lot of great gluten free breads out there, but sometimes I just don’t want another heavy dish on my Thanksgiving plate. This recipe is made with cauliflower instead of bread and you will LOVE it!  I promise.

Stuffing also normally has a ton of butter.  This recipe is totally dairy free and has no oil or butter at all!

Change up the recipe by adding dried cranberries, apricots or some dried fruit to make it a little sweeter!  Be creative!


Cauliflower Sausage Stuffing

Serves 5


3 Links Italian Chicken Sausage, Removed From Casing

1/2 Cup Onion, Diced

1/2 Cup Celergy, Diced

1/2 Cup Carrot, Diced

5 Cups Cauliflower, Cut In Small Florets

1 Teaspoon Poultry Seasoning

1/2 Teaspoon Kosher Salt

1/4 Cup CHicken Stock

1/4 Cup Candied Pecans (From Trader Joes) or Pecan Pieces, Roughly Chopped


  1. In a large dutch oven pot or cast iron skillet brown the sausage over medium heat.
  2. When the sausage is cooked and brown add the onion, celery and carrot.  Saute for 5 minutes.
  3. Add cauliflower, poultry seasoning, salt and stir to combine.
  4. Add the chicken stock and cover the pan with a lid.  Cook for 7 minutes or until cauliflower is soft.
  5. Remove from the heat and add candied pecans.




Gluten Free and Dairy Free Pumpkin Chocolate Chip Cookies

These cookies are seriously the best Fall cookies EVER!  And they are gluten free and dairy free! Here are some tips to making the best cookies!

  1. Cream the butter or Crisco and sugar together with a wooden spoon or spatula.
  2. Use vanilla bean paste.
  3. Use some jello pudding dry mix in your gluten free baking to cut out any weird tastes from the gluten free flours.
  4. We love this gluten free flour mix.
  5. I love to use these parchment cookie sheet liners for easy clean up.


Pumpkin Chocolate Chip Cookies

Makes 2 Dozen


1 Cup Buttered Flavored Crisco or Butter

1 Cup Brown Sugar

1/2 Cup Granulated Sugar

1 Teaspoon Vanilla Bean Paste or Vanilla Extract

15 Ounce Can Pumpkin Puree

1 Pack Dry Vanilla Pudding Mix

2 Teaspoons Ground Cinnamon

1 Teaspoon Salt

1 Teaspoon Baking Powder

1 Teaspoon Baking Soda

1 1/2 Cup Bob’s Red Mill 1 to 1 Gluten Free Flour

1 Cup Chocolate Chips


1. Preheat oven to 350 degrees.

2.  In a mixing bowl cream together butter and sugars with a spatula (you can also do this in an electric mixer but you will get fluffier cookies if you do it by hand).

3.  Add Vanilla Bean paste and pumpkin puree and mix to combine.

4.  Add pudding mix, cinnamon, salt, baking powder, baking soda and the flour and stir to combine.

5.  Stir in chocolate chips and place in the fridge for 20 minutes.

6.  Using an ice cream scoop or your hands grab about a golf ball size amount of dough and place on a parchment lined baking sheet.  You can fit 9 cookies on each sheet.

7.  Bake for 12 minutes, remove from the oven and let cool.

Celiac Diagnosis… What Next???

Need to feel inspired? Living with food allergies, intolerances and celiac disease can be an isolating and discouraging reality. It was for us, for quite a while. When my daughter was first diagnosed with Celiac Disease, I didn’t even know where to start. There was so much to learn about and implement that I was completely lost.

I did what most of you do, search the internet, joins social media groups and try to stay clear of negativity… cause lets face it… nobody’s got time for that!


When my mind wouldn’t let me rest, I would find myself getting lost in my research at wee hours of the night.

Knowledge IS Power! I knew that what I was learning from all of these different resources were amazing and I needed to start implementing. I had to make baby steps… some can go all out from the start… but I knew for me and my sanity that I needed to start small and find my groove. So that is what I did.

A few months after my little 2 year old was diagnosed, I decided to create an Instagram account to put resources and hope out for the world to see. I started what was then called Serving Celiacs.

IMG_4219Serving Celiacs helped me to be better, to learn truths, find clarity and reach out to others that are in similar situations. It was a wonderful opportunity for me and led me to linking up with Chef Megan to hold cooking classes for those that are primarily gluten free.

What a fun and exciting adventure that was! And after one of our classes we chatted it out and realized that we need to help more people out… more people than just gluten free eaters. We need to help all those with food restricted diets.


So we merged and created Allergy Reality! We have social media sites, an educational gaming app, and our latest adventure is our YouTube Channel, Allergy Reality. Chocolate Banana Protein Shake
1 Cup Crushed Ice
1 Ripe Banana

Place all ingredients into a blender or magic bullet.  Blend until smooth about 45 seconds and serve!
